Buttermilk is used in the original Red Velvet Caken. However, it is very difficult to find buttermilk in our country. That’s why we get buttermilk ourselves. For this, we mix whole milk with an acidic substance such as apple cider vinegar or lemon juice.

The milk to be used in making Buttermilk must have been preheated to room temperature.

Kefir can also be used instead of buttermilk.

Cocoa, which is used to give the velvet cake its distinctive red color, is very important. The cocoa used should not be “dark cocoa”. Otherwise, the color of the velvet cake may be quite dark.

It is also very useful in obtaining the unique color of the cocoa velvet cake. Thanks to the ingredients in cocoa, the red velvet color is easily caught.

By mixing baking powder and lemon juice, the cake can rise better.

The eggs, butter and vinegar used in the cake material must be at room temperature.

Baking powder and lemon juice are also added to the bowl with flour.

The egg, butter, sugar mixture is combined with the flour mixture and the cake batter is obtained.

The velvet cake dough is poured into a 22 cm clamp cake mold and baked in a preheated 170 degree oven for an average of 50 minutes.

The baked cake is not taken out of the oven immediately, it is kept at oven temperature for 10 minutes after the oven is turned off and then removed.

If there is time, the cooked velvet cake is wrapped in a stretch and left to rest in the refrigerator for 1 hour.

The juice of mascarpone or labne cheese is drained and placed in a large bowl.

Powder whipped cream and liquid cream are added on it and mixed until it thickens. The thickened cream is covered and kept in the refrigerator for at least half an hour.
